Texas Slow Cooker Beef Chili from Down South Paleo

DOWN SOUTH PALEO

Y’all. (I don’t even have to cop to saying “y’all” frequently in my every day life because it’s totally appropriate here, so you can imagine it’s all part of the “down south” vibe.) I have been following Jennifer Robbins for a while and I have loved all of her recipes! I mean empanadas? Paleo empanadas? She had me at yuca, before I was even sure how to pronounce it (it’s yoo-cuh, by the way). I knew a cookbook from her creative mind would not disappoint, so you know I put in a pre-order for this bad boy.

If you follow me on Instagram, you might’ve seen that I made a berry cobbler recipe THE night I got the book. I couldn’t wait- everything looked so good, I had to make something right away!

And although it’s still over a hundred degrees some days here in Texas, we got a nice reprieve today with some cloudy weather- it was time to make some chili! Not that I ever really need an excuse for chili because our family loves it. It’s the perfect dinner for a big family: filling, well-rounded, and easy to make big (ok, huge) portions of at once. I often put beans in ours (soaked white navy beans are GAPS Diet-friendly), but somehow this chili was more filling than usual. My boys usually can’t get enough chili and we were all pretty much satisfied with one bowl. This chili is delicious and miraculous! It also has a sweet, southern flavor that is so satisfying and comforting.

Other recipes I can’t wait to make? Hushpuppies. ‘Nough said. Chicken chimichangas, sopapillas, and chocolate chip Georgia pecan pie are on my list too (though I will have to wait for a bit on those sweet treats while we’re on the 21 Day Sugar Detox). There’s even a recipe for dairy-free jalapeno poppers. Seriously, I am going to love cooking my way through this thing. But on to the main event:

Texas Slow Cooker Beef Chili from Down South Paleo

Ingredients

  • 1 lb grass-fed ground beef
  • 1 green bell pepper seeded and diced
  • 1 large onion diced
  • 4 large carrots chopped small
  • 26 oz finely chopped tomatoes
  • 1/2 tsp ground black pepper
  • 1 tsp  salt
  • 1 tsp  onion powder
  • 1 tbsp. chopped fresh parsley
  • 1 tbsp.  Worcestershire sauce
  • 4 tsp  chili powder
  • 1 tsp  paprika
  • 1 tsp  garlic powder
  • pinch of cumin

Instructions

  • Place the ground beef in a medium skillet over high heat and brown, stirring, until no longer pink. Spoon it into your slow cooker, including the fat. Now place the green bell pepper, onion, carrots and tomatoes into the slow cooker. Stir all the ingredients well, then add the remaining spices and seasonings. Stir once more, cover and cook on low for 8 hours, or high for 5 hours. Top with dairy-free sour cream if desired, additional diced onions or jalapenos.

“Caulifredo” Paleo AIP and GAPS Diet Friendly Cauliflower Sauce Recipe

When you’re navigating dietary restrictions, things can get complicated. This cauliflower sauce recipe uncomplicates things. It’s dairy-free, egg-free, gluten- and grain-free, and suitable for paleo, GAPS, and AIP diets.

Who would’ve thought cauliflower would end up being the darling of paleo kitchen everywhere? It turns out it’s super versatile and can be used to make all sorts of things, from pizza crust to “rice” and even this cauliflower sauce recipe, which I use frequently in my kitchen in all sorts of dishes.

We’ve gone through our fair share of dairy-free phases, and when we do, it’s nice to have some substitutes for some our favorite foods. This cauliflower sauce recipe works well on pizza or spaghetti squash “pasta.” Feel free to add butter if you can tolerate it for awesome flavor and creamy texture. Fresh or dried Italian herbs (oregano, thyme, basil) work well as an addition for a pizza sauce as well.

Ingredients

  • 4 cups cauliflower florets
  • 1 cup chicken broth homemade is best
  • 2-3 cloves garlic
  • 1 t.  salt
  • 1/4 t. ground black pepper omit for AIP

Instructions

  • In a medium saucepan, combine all ingredients and simmer for 10-15 minutes, until cauliflower and garlic are tender.
  • Remove from heat and blend with an immersion blender like this or transfer to a blender and blend until smooth.

We really love it because it’s so versatile. I use it as a sauce in spaghetti squash chicken spaghetti and in chicken broccoli alfredo, as well as on these pizzettes for a dairy and nightshade-free option. The best part is that it’s another tasty way to get in more veggies!

Chunky Bacon Jalapeno Salsa: Recipe

I live in Texas… I love some good Tex Mex! I grew up in New Mexico… I do NOT like spicy food! (I’m not sure what growing up in New Mexico has to do with that…) I really love the flavor of a good pepper, but I am a huge wimp when it comes to heat. This salsa balances a mild pepper flavor with some fun, tasty flavors that compliment each other well. If you’re not a wimp like me, you could sub some hotter peppers for a spicier flavor. Go make this easy bacon jalapeno salsa!

Chunky Bacon Jalapeno Salsa

Ingredients

  • 3 slices uncured bacon
  • 3 jalapenos seeded and diced
  • 1/4 cup diced onion
  • 1/2 cup halved cherry tomatoes
  • 1 avocado cut into chunks
  • Optional: Fresh cilantro to taste or about 1-2 tablespoons.

Instructions

  • 1. Fry the bacon until crispy, then remove from heat to cool. Reserve the bacon grease in the skillet.
  • 2. Sauté the diced jalapenos and onion in the bacon grease for about five minutes on medium-low heat.
  • 3. Crumble the cooled bacon and add it together in a bowl, along with the sautéed veggies and tomatoes and avocado.
  • 4. Add chopped fresh cilantro, if desired.

Maple Butter Recipe: A Rich, Decadent, Healthy Treat Your Family Will Love

This maple butter recipe is rich, decadent and healthy! | The Family That Heals Together

When I set out to look for a maple butter recipe, I assumed the recipe would include melting down butter and combining it with maple syrup, and possibly some other ingredients if we’re talking about a conventional, main-stream recipe.

It turns out “maple butter” is more like a nut butter in that it’s the concentrated form of the main ingredient: maple syrup. In fact, it looks and feels almost just like peanut butter, but it tastes waaay different! Be sure to head over and make my recipe for maple butter blondies when you’re done here.

This recipe is a bit of work, but trust me, it’s worth it!

Maple Butter

Ingredients

  • 1/2 cups  maple syrup
  • T.  ghee
  • t.  vanilla
  • dash real salt

Instructions

  • Pour maple syrup into a medium saucepan and bring to a boil over medium-high heat. Cook until a candy thermometer registers 240 degrees (soft-ball stage), about 10 to 15 minutes.
  • Remove the pan from heat and stir in the ghee until melted.
  • Quickly transfer the mixture to the bowl of an electric mixer fitted with the paddle attachment. Beat, starting on low and increasing to high, until the mixture is thick, opaque, and creamy, about 8-10 minutes. Store in an airtight container in the refrigerator.
